In 2020, the video-sharing app made Dalgona coffee the must-try drink of quarantine, and now, it’s introducing you to the latest beverage you should sip on your coffee break: the Iced Biscoff Latte.

Both java beverages existed before TikTok, but thanks to the app, a large audience is discovering them for the first time. And if you ask us, anything that converts people to the dark side — or the dark-roasted side (*ba dum tss*) — with the rest of us coffee-obsessed folks is a good thing.

With this recipe, our focus is on cups of coffee flavored with Biscoff cookie butter — Biscoffees, as we call them — and we’ll show you the best way to make them at home.

What is Biscoff cookie butter, anyway?

Cookie butter is a mixture of cookie crumbs, fat (like vegetable oil, condensed milk, or butter), flour, and sugar, and it has a consistency similar to peanut butter.

The sweet spread functions like peanut butter, too, pairing perfectly with things like ice cream, toast, and baked goods — virtually anything you’d partner with nut butter works here, too.

Many brands, including Trader Joe’s, have their own cookie butter, but Lotus Biscoff is probably the most well-known manufacturer of the smooth spread.

Does that brand name sound familiar to you? It should, especially if you’ve flown with American Airlines, United, or Delta. Each of these airlines serves the caramel, brown sugar, and spice-flavored Lotus Biscoff cookies on their flights. How to Make a Lotus Iced Biscoff Latte

Iced Biscoff Latte

You’ll Need:

  • 1 or 2 tablespoons of Lotus Biscoff Creamy Cookie Butter
  • 2 espresso shots
  • Almond milk*
  • Ice cubes
  • Tall glass
  • Frothing pitcher
  • Handheld milk frother

*We used almond milk because it’s what we had on hand, but whole milk or one of the milk alternatives on the market (oat milk, cashew milk, etc.) will work just as well.

The Process:

Step 1

Start by scooping one or two spoonfuls of cookie butter into the espresso cup.

The flavor of Biscoff’s cookie spread is pretty subtle when mixed with coffee and milk, so if you prefer your iced coffee drinks on the sweeter side of the spectrum, you might want to add more.

Step 2

Fire up the espresso machine and let the shot brew directly over the Biscoff spread. The hot coffee gets the cookie butter warm and melty, making it easier to stir.

When you’ve finished brewing your shots of espresso, use a spoon to mix the cookie butter-coffee mixture until it’s smooth. 

Step 3

It’s time to get frothy! Pull out your frothing pitcher and milk of choice, and use your handheld frother to create a fluffy layer of foam. 

Step 4

Fill a tall glass with ice, then pour the milk froth into it. Finish the recipe by pouring the hot espresso-Biscoff mix over the bubbly milk, and you’re ready to enjoy the delicious cookie butter iced latte!
