These two drinks are completely different products. They require different processes to brew, and they pull different flavor profiles from the beans. And they pair with your favorite milk and syrup differently too. Let’s discuss the reasons why this confusion occurs, why your local shop might be swapping them out, and how to understand the contents of your drink.

What Iced Coffee Actually Is

Iced coffee is exactly what the name implies. It is normal hot coffee that has been cooled and poured over ice.

At some cafes, they brew a batch of drip coffee and then place it in the fridge for the next day. They might also use flash chilling, where hot coffee is brewed directly over a pitcher filled with ice.

Because hot water is used to brew the coffee, it removes the bright and fruity flavors from the coffee beans and leaves a refreshing bite. Iced coffee pairs really well with a splash of whole milk. If you love refreshing coffee and want it to cut through the milk, then iced coffee is your best friend. On the other hand, if the hot coffee sits in the fridge, it becomes oxidized and very bitter.

What Cold Brew Actually Is

Unlike coffee, cold brew is never exposed to hot water.

In this process, the ground coffee is soaked in water that is either cold or warm, for a duration of between 12 to 24 hours. In this case, time replaces heat for the extraction process.

The coffee’s flavor profile includes a dominant heavy and syrupy chocolate or caramel taste. Additionally, cold brew has a lower acidity content in comparison to iced coffees. This is the reason for the incredible smoothness of cold brew coffee. It is ideal for adding a generous portion of oat milk or vanilla syrup, as the rich coffee flavor can stand on its own without sharp bitterness.

I worked as a barista and I can explain why your favorite coffee shop is probably deceiving you. Cold brew is both time and space intensive to prepare.

Shops often reserve large containers to brew cold brew coffee. In a heatwave, when everyone is ordering cold brew coffee, those shops sell out by 10 am. Cold brew coffee is also the only coffee that cannot be made at any point, due to its 24 hour brew time.

Some cafes try to substitute iced coffee when there is a long line out the door. They quickly brew a fresh pot, toss in some ice, and hand it to you, hoping you won’t notice. It is easy to tell though. If there is a strong acidity in your drink or it tastes watered down, then you are drinking iced coffee. Cold brew always tastes soft, sweet, and smooth.

How to Make Your Favorite at Home

You can even make both drinks yourself at home.

For cold brew, you want to take some coffee grounds and combine it with a bit of cold water in a large jar. You want to use a 1:4 ratio of coffee to water. Then let it sit overnight. The next day, strain out the grounds. You can do this with a fine mesh strainer or maybe a paper filter. Pour it over some ice and add water or milk as desired. I like to add my cold brew with some brown sugar syrup and a little half-and-half.

To make iced coffee, the best method is called flash chill. Brew your coffee this morning and use half the amount of water you usually do. Brew it directly over a cup full of ice. Since the ice is there, it will dilute the coffee to just the right amount while keeping all the hot flavor. It tastes amazing black but also works with a little almond milk.
